The morning came around and we decided to do our morning activities before brunch. He went for a jog and I went to the store to pick up a some heavy cream for the baked eggs. I decided that it was a beautiful morning and my cat, Socks deserves some fresh air. I strapped her into her little harness and head out for a short walk to the corner store. Everything was dandy and fine on our way there. She saw some birds that looked interesting and paused a lot to explore slowly. I carried her most of the way to make the walk a little faster. On our way back, she wanted to jump out of my arms which I thought was her way of saying, "Let me down I would like to walk by myself". But man was I wrong. She bolted as soon as her paws touched the pavement. She even fought her way out of her harness. (This part still eludes me... maybe she used to be an escape artist.) I was lucky enough that someone helped me to stop her. It was an adrenalin rushing 5 minutes for socks, the nice man and me.
By the time I got home, it was 11:00 am. Socks needed a wash and all of my clothes needed a wash as everything reeks of a nervous cat. I was completely soaked in the shower trying to get her clean. It took about half for the cat washing to complete. Bf was nice enough to wipe down every surface socks ran across and to dry her while I clean up. It was 12:00 pm when the crisis ended. By then we were both starving for some breakfast and thank god the recipe is easy and quick! It might be the hunger talking but this recipe is a definite a win, and more importantly a quick win!
Baked Eggs
Adopted from Pete Bakes!
Recipe makes 4 eggs (2 egg per large ramekin).
1 teaspoon Italian herb seasoning or fish seasoning
1 tablespoon seasoned bread crumbs
1 tablespoon freshly grated parmesan or any other strongly flavoured cheeses
1 tablespoon crumbled cooked bacon (optional)
4 eggs
2 tablespoons heavy cream
1 tablespoon butter
salt and pepper to taste
- Preheat the oven on "high broil" while you prepare the ramekins.
- Combine the seasonings, parmesan and bread crumbs.
- Add 1/2 of the butter and heavy cream in each ramekin. Put them on a baking sheet and place in the oven for 2-3 minutes, until bubbly and slightly browned.
- Remove the ramekins from the oven and crack 2 eggs into each and cover with foil. Place back in the oven for 2 minutes.
- Uncover the foil and sprinkle half of the crumb topping in each ramekins and place back in the oven for another 2 minutes.
- Let cool for 1-2 minutes and serve with your chose of bread and fruits!
