Let's Maple-Up Some Salmon!

French Canadians are supposedly known to drink maple syrup when the season comes. (I actually know one who does. Quite an awesome substitute for morning cofee!) The syrup season is HERE! Being just a Canadian, I settle for eating maple cream by the spoonful straight out of the little styrofoam cup that it comes in. Oh so delicious! I have great plans to make some soon. For now, I'll just maple-up some delicious salmon fillets for dinner. <3!


Maple Salmon Fillets
Makes 2 servings
2 salmon fillets (personal-sized)
1/3 cup coarse sea salt
3 tablespoons brown sugar
1/2 teaspoons ground black pepper
Maple syrup (approximately 4 tablespoons)
1 cedar plank (optional)

  1. In a bowl, mix salt, brown sugar and black pepper together. Wash and dry the fillets an place on a plate. Cover the fillets with the salt mixture. Cover with plastic wrap and refrigerate for 2-4 hours. While you wait, soak your cedar plank for 2 hour. All the instruction regarding the cedar plank is optional.
  2. Rinse fillets to remove all the salt mixture. Pat dry with paper towel.
  3. Adjust the top rack in the oven so it sits as close to the top heating element as possible. Preheat oven to low broil. Place the pre-soaked plank on a baking sheet then put on the top rack in the oven until it's slightly charred.
  4. Put the fillets on the plank and brush them with some maple syrup. Broil for 2 minutes and remove from the oven to brush some more syrup on top. Broil for another 2 minutes. Brush with more syrup and broil for another 2 minutes. Alternatively, brush the fillets once with syrup, broil until cooked. At the same time put 1/3 cup of syrup in a small saucepan and heat until it thickens. Drizzle thickened syrup on top of the cooked fish.
