Oatmeal Raisin Cookies
To make really thick cookies, refrigerate cookie dough for 1 hour or more before baking.

Makes 16 cookies
1/2 cup butter, softened
2/3 cup brown sugar
1 egg
1/2 teaspoon vanilla extract
3/4 cup flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups rolled oats
3/4 cup raisins
- In a large bowl, cream together the butter and brown sugar. Then mix in the egg and vanilla until smooth. In a separate bowl, mix together the dry ingredients. Stir this into the butter mixture. Stir in the oats and raisins.
- Preheat the oven to 350F. Drop dough by the spoonful 1 inch apart on a parchment-lined baking sheet. Bake for 12-15 minutes, or until golden brown. Cool slightly on the baking sheet before moving to a cooling rack.
